Sushi Kodawari is an intimate dining space dedicated entirely to an eight-seat hinoki sushi counter. There is no need to order food; the omakase-style set menu offers those ingredients that are at their best each day. Much of our food comes from the oceans and fields of Japan, but we also highlight exceptional ingredients from elsewhere around the globe.

The sushi is heavily inspired by the traditional edomae style developed in old Tokyo 200 years ago. Our rice is boldly seasoned with aged Japanese red vinegar. Many fish are dry-aged, cured, pickled, or preserved to develop flavor and texture. Edomae is about serving food when it is best, not when it is “freshest.”

As much as we appreciate the edomae tradition, we are not shackled to it. In addition to classic preparations, we also explore new and playful ways to reinvent old staples and introduce new ingredients that were unavailable to the itamae operating roadside stalls in the days before modern refrigeration and international shipping.
